The name of the shop, which is also the name of our company, combines the word “Star” to honor the five stars of our Honduran flag and “beans” to emphasize the fact that our coffee beans are hand-selected to obtain the quality of flavor of our exquisite coffee in every cup.
In Honduras 110,000 families support themselves through coffee farming at small family farms. The family work takes places in rural areas, and they collect their aromatic beans which are the heart of each cup of coffee, and which have grown into a coffee culture in our country of nearly 194 years. Currently, Honduran coffee is recognized as one of the best in the world.
Since 1954, our farm “El Gavilán” has been grown and worked by one family. Mr. Ismael Maldonado, the farm owner, taught his children and grandchildren his love, passion and dedication in the farming and harvesting of quality coffee. Juan C. Maldonado, the current owner of the farm, grew up working his grandfather’s farm, and ended up inheriting the farm “El Gavilán” and expanding the growth area and the coffee bean variety. In 2012 he traveled to the United States with 12 lbs. of roasted coffee to share with family and friends.
The following year he took 60 lbs. of coffee. This is how the idea of bringing 100% Honduran grown coffee to an international market surged, with the goal of promoting and supporting the work of coffee growing families through fair price practice. From the 2018-2019 harvest they were able to export 12 sacks of coffee, 69 kilos each, from Santa Barbara, Honduras to Savannah, Georgia. This was achieved by the Maldonado family with help from IHCAFE, an Institute that offers help to small coffee farmers in the exporting and production, tasting, control and management of the farms.
